Colomé Hotspots:
The oldest working wine cellar in Argentina. It was built in 1831.
The world’s highest vineyards, growing at 2,200 meters / 7,217 feet to
3,015 meters / 9,891 feet.
Colomé vineyards are treated organically.
Winery
The wine cellar, built in 2005, is equipped with cutting-edgemachinery,
with a 1,3 million liters capacity. The wine cellar also provides a
deposit for casks and merchandise in boxes. Our next step will be to build
a "chais à barrique" for 2,000 casks. In a nearby future, we will open the
wine cellar information center for visitors and business and the wine and
movies bar that will project movies on wine production and contemporary
art.
Winemakers: Our winemaker, Mr. Steve Galvan, has elaborated wines
in many renowned wine cellars in the world. He worked in California for
Mayacamas, Stag’s Leap, Niebaum Coppola only to name some, and more
recently in the wine cellar Quixote. The last two Petit Syrahs that were
launched by them, "Belly" and "Quixote", were awarded 93 points by the
Wine Spectator Magazine. Steve’s experience in the elaboration of wines is
international, as Château Petrus and Château Magdelaine in France. In
Spain he worked with Mr. Alvaro Palacios in the very much praised region
of Priorat. Mr. Palacios is known to be one of the best winemakers in
Spain. Steve also worked in New Zealand where he was one of the winemakers
for Kim Crawford winery. Our assistant winemaker, Mr. Thibaut Delmotte, is
originally from France. He studied oenology in Burgundy, and worked in
several wineries in Bordeaux.
Harvest:
The grape harvest takes place from the
beginning of March to the end of April. All our grapes are collected by
hand, and set in plastic boxes of 15 kg in order to keep them intact until
they get to the wine cellar. Each variety of grapes and each plot is
individually controlled and harvested at the desired ripening point.
Winemaking:
In the wine cellar, and before crushing them, all the grapes are
selected by hand in order to ensure that only the fruit with the best
quality is employed in the elaboration of the wine. During the
fermentation process, it is of vital importance to constantly control the
temperature. The pumping is practiced twice a day. In order to take
advantage of the high quality of our grapes, the grapes are pressed away
from the skins after a long process of soaking. The wines age 12 to 18
months in French oak tree casks.
Vineyards
In order to reach
our high quality standards, all the vineyards are limited to a very low
yield, 2.5 – 3 tons by acre / 5.5 – 6.6 tons per hectare. And the oldest
vineyards have a lower yield still. Our wines are very concentrated and
complex. Due to the dry climate and high evaporation, we irrigate all our
vineyards: in the old vineyards we employ the traditional irrigation
system (gravitational) practiced by the aboriginal inhabitants for
centuries, while the new plantations are equipped with an irrigation
system by automatic leak. Our four vineyards are under the responsibility
of Mr. Javier Grane, our Vineyards Manager.
